During this time, the steak will finish cooking and the juices will have time to circulate. The steak should sit at room temperature and be loosely covered until it is ready to serve.

Room temperature steaks placed on a hot grill and cooked to perfection on each side, then allowed to rest, will be the juiciest pieces of meat.
